Wild-caught off the coast of Argentina from our own vessels, we are able to capture and preserve the quality of taste and texture by freezing at sea, within minutes of harvest.

What are Patagonian Scallops?
Patagonian scallops are small, cold-water scallops harvested from the waters off the southern coast of Argentina. They are known for their sweet, delicate flavor and tender texture.
What do they taste like?
They have a slightly sweet, delicate flavor with a tender yet firm texture. Their mild taste pairs well with a variety of seasonings and sauces.
What is the difference between a "dry" scallop and "wet" scallop?
Our scallops are classified as “dry scallops,” meaning they are harvested and preserved to maintain their natural moisture and smooth texture. Free from artificial additives, they are tender, sweet, and ideal for searing.
In contrast, “wet scallops” are treated with preservatives that cause them to absorb excess water, making them appear shinier and larger. This additional moisture can lead to a rubbery texture and undesirable flavors.

Our fishery is MSC certified, scallops are all natural and unadulterated with no chemical additives.
