In 1997 we challenged ourselves to create a new offering that holds the quality of a beautiful scallop yet makes them more accessible to a greater range of budgets.
Scallop medallions, formed from sweet and succulent sea scallops, were the result.

What is a Scallop Medallion?
Our Scallop Medallions™ entered the market in 1997, revolutionizing the scallop industry. We led the way by using new technology to turn small scallops into larger ones to meet high demand and rising prices.
Our scallop medallions are made from whole Patagonian sea scallops. To achieve the larger, tender medallion shape, we carefully mold the scallops using fish gelatin, a natural protein, into a consistent, organic form, available in any size.
What do they taste like?
They have a slightly sweet, delicate flavor with a tender yet firm texture. Their mild taste pairs well with a variety of seasonings and sauces.
What is the difference between a "dry" scallop and "wet" scallop?
Our scallops are classified as “dry scallops,” meaning they are harvested and preserved to maintain their natural moisture and smooth texture. Free from artificial additives, they are tender, sweet, and ideal for searing.
Do you have certifications?
Our fishery is MSC certified, scallops are all natural and unadulterated with no chemical additives.
Our processing plant is BRGCS certified.
